I won't say much, because people I work with read this journal!
I will say this. Think salsa. Think tangy, spicy, sweet. What does one need to round out this flavor profile? What ingredient provides that without dominating?
I had thought about using grapefruit juice instead of the more traditional lime, but that will have to wait for next year.
