Soup.

So my biggest pot (my canning rig) is not big enough for the turkey carcass, which weighs in at just over seven pounds. The carcass goes in the pot, but half of it sticks out the top.

Solution? After the lower have has simmered for a bit, flip the bird over. It'll take twice as long, but it'll be worth it.

Second problem: I appear to be out of onions. This hasn't happened to me for years. I ALWAYS have onions. I am unwilling to brave the frozen piss that is currently our weather to get an onion.

I have a mongo humongo canning dealy. It's for canning quarts (too big). It might work for your carcass. Also I bought 10# of onions in the onion sale. You should call the boys about that, I think they can solve your problem.

After a half hour of simmering, I lifted the carcass to check its progress and it tore in half under its own weight. Glad that doesn't happen to live turkeys... that would make turkey farming altogether too complicated.

Oh, I wouldn't make the boys venture out in this weather just to bring me an onion. It's so cold, the rain's starting to look an awful lot like sleet, and there's a high wind advisory in effect.
