Soup.

So my biggest pot (my canning rig) is not big enough for the turkey carcass, which weighs in at just over seven pounds. The carcass goes in the pot, but half of it sticks out the top.

Solution? After the lower have has simmered for a bit, flip the bird over. It'll take twice as long, but it'll be worth it.

Second problem: I appear to be out of onions. This hasn't happened to me for years. I ALWAYS have onions. I am unwilling to brave the frozen piss that is currently our weather to get an onion.

So, only half the stock fit in my soup. You know what that means...

I have too much turkey stock!

Okay, literally, that was absolutely the best turkey soup I ever made. Bar none. In fact, it's the best thing I ever made out of a pot of bones from any animal. Of course, I like a lot of stuff in my soup, so it was so thick with stuff (veggies, kale, chick peas, brown rice, turkey) that to serve it, I had to spoon a pile of stuff into my bowl, and then very carefully dip some broth over it. But the broth was delicious by itself.

Also noteable, it's the first time I ever actually made stock in my stock pot.

I love turkey. I just love turkey. Most people I think take a whole year to work up an appetite for turkey... it's not that they don't like it, it's just that there's so much turkey during one part of the year, it's easy to get turkeyed out. I don't get turkeyed out. Of course, I like almost all food, so there you go.

The leftover stock is in one of my big casseroles in the freezer, well on its way to becoming a stock block.

If you didn't laugh at that, check your pulse. You might just be a zombie.
